    Gluten Free Pumpkin Muffins

Happy Halloween! I’m back with yet another pumpkin muffin recipe. Yep, I just love pumpkin too much to not post another one on Halloween! You know how I know these ones are really good? Everyone in my office loved them at our Halloween party. Even the people who aren’t gluten free, including me! They’re perfectly moist, not too sweet, and you really get the pumpkin flavor. I adapted the Flourless Pumpkin Muffin recipe from one of my favorite bloggers, Making Thyme for Health, according to what I had on hand and they turned out great! Highly recommend for anyone looking for a healthier pumpkin muffin recipe. I hope you enjoy! Yum…

    Miso Glazed Veggie Bowl

Do you ever feel like you’re in a cooking rut? Always getting the same items from the grocery store, having the same thing for breakfast, and cooking the same things for dinner every week? I hear you. I have been feeling the same way recently. And I’m also here to tell you, it’s so easy to switch it up just by making some simple swaps! I transformed my typical “Asian veggie bowl” into something with unique flavors and textures just by swapping out a few items. Swap #1: Grains My go-to grain is brown rice, sometimes quinoa, but mainly brown rice. This time, I switched it up with farro! Farro…

    Peanut Butter Banana Walnut Bread

When it’s snowing outside, all I want to do is bake. Unless I’m up in the mountains and can ski fresh powder… But that’s still a couple months away. The first snow happened early this year, it’s only October 14 and there are four inches of snow outside! Fortunately, my mom was in town this weekend and there’s not many things better than spending a snowy weekend baking & cooking with mom! I wanted to try something new since I’ve been going heavy on everything pumpkin. I LOVE pumpkin but it’s nice to switch it up every once in a while! Hence, the peanut butter banana walnut bread. This recipe…

    Pumpkin Chocolate Chip Breakfast Bread

The leaves are changing, the weather is starting to cool off, and Trader Joes has all their pumpkin items in stock. It’s officially fall. Now, I don’t know about you but I LOVE everything pumpkin. Always have. There’s something about the smell, the feeling I get when I get a big wiff of cinnamon, pumpkin spice, or toasted pecan, that makes me all warm inside. Out of all the fall-inspired eats, pumpkin chocolate chip bread has always been my favorite. I’ve tried a few recipes out and this one is a winner! I hope you enjoy it 🙂 Print Pumpkin Chocolate Chip Breakfast Bread Prep Time 10 mins Cook Time…

    Cranberry Oat Bites

I can’t believe we’re already half way through March and I’m moving to Denver in less than two weeks! That’s right, I’ll be out in the Mile High City soon and cannot wait for this new chapter in my life. Moving can be hectic and stressful but I’ve been living by the mantra “Everything is as it should be” to keep me from getting too stressed out by it. Also, these Cranberry Oat Bites definitely help 🙂 Ingredients -1 3/4 cups rolled oats -1/4 cup peanut butter, melted -1 scoop IdealFit vanilla protein powder -2 tbsp Anthony’s Goods chia seeds -1/4 cup maple syrup -1/2 cup chopped walnuts -1/2 cup…

    Banana Nut Bread Bars

How many times have you walked into a coffee shop with the intention of only getting a cup of coffee, to walk out with a pastry from their mouth-watering selection? It’s hard not to when they all look so delicious and that scone would go so well with my latte… Next time you feel that way, make this banana bread instead. I swear, it’s better than any other banana bread I’ve had and doesn’t have any added sugars. That’s right, none. It’s also gluten and dairy free. You’re welcome. Ingredients Makes approx. 8 squares -2 ripe bananas, mashed -2 eggs -2 tbsp collagen (I use Anthony’s Goods) -1 tsp vanilla…

The Bare Necessities of a Foodie

It’s been a little while since I’ve written a helpful blog post, sorry for the silence over the past month! I’m currently in the process of moving from Austin to Denver, so things have been pretty crazy for me lately! Recently, I’ve had several people come to me asking how I go about grocery shopping and planning my meals for the week, so that’s what I’m going to focus on in this post. It’s really simple to eat healthy and most of the items I buy are not expensive, so get your grocery list ready! First, I have my pantry staples. If I don’t have the following in my pantry…

    Healthy Cookie Dough Bites

I’ve been finding myself experimenting with recipes a lot more now that the gloomy days in January have me curled up inside. The pressure of the holidays is gone and I can create new recipes and not worry if they don’t turn out great. This is one that I’ll definitely be using more often when I’m craving chocolate cookie dough. There are only 6 ingredients and it takes less than 10 minutes to make. Enjoy! A post shared by Caroline Kennedy (@a_dash_of_sweet_caroline) on Jan 27, 2018 at 2:34pm PST Ingredients Makes approx. 10 bites -3/4 cup chickpeas, rinsed & drained -2 tbsp maple syrup -2 tbsp almond butter -1/4 cup…

    Monster Granola Cookies

When prepping for a weekend of adventuring, there’s one thing that is often overlooked- snacks. Most of the time, it’s easiest to grab a handful of granola bars at the grocery store and call it done, but if you could whip up some delicious snacks at home, without all the preservatives, wouldn’t you prefer that? I would. I’ve posted a few recipes for granola bites and energy balls, but for my upcoming ski trip I wanted something heartier to keep me full during a long morning of skiing. This is a healthier version of my mom’s Monster Cookie recipe, adapted from a BeazysBites recipe I came across the other day. As…

    Grain-Free Date & Nut Bites

How often do you crave a cookie? I bet you’re craving one right now. I love cookies as much as anyone, but I don’t always have time (or patience!) to make a batch from scratch and wait while they bake. They also have a lot of added sugar and never taste quite as good with sugar & flour substitutes. So, I’ve come up with a super quick, healthy solution. No-bake, grain-free, guilt-free bites! That’s a mouthful. Literally. As always, feel free to adapt the recipe according to what you have on hand, the only staple in this one is the dates.
