    Coconut Cranberry Granola

My favorite thing to do on snowy days is bake. After sleeping in, jumping into some cozy clothes, and drinking a hot cup of coffee the first thing I do is find a recipe that sounds warm and comforting. This time, I was browsing through my Instagram feed, waiting for something to call out, “pick me!” The Coconut Oil Granola recipe from Pinch of Yum stopped me in my tracks. To be honest, I have never made homemade granola. I know, right?! Crazy. Now, I have no idea why I never made it before! I already had all of the necessary ingredients in my pantry so with a few substitutions…

    Pumpkin Fig Newtons

Did you eat Fig Newtons as a kid? I sure did. Man, I loved those things. At the time, they seemed like a healthier choice compared to other cookies but now I know that they were filled with sugar and artificial ingredients. I stay away from packaged snacks and desserts due to all the processed ingredients and high sugar content but sometimes I crave some of my favorite childhood snacks. I first came across a similar recipe for a healthier version of Fig Newtons on Clean Eats by Tay‘s Instagram and changed a couple things according to what I had on hand and they turned out pretty darn delicious! They’re…

    Peanut Butter Banana Walnut Bread

When it’s snowing outside, all I want to do is bake. Unless I’m up in the mountains and can ski fresh powder… But that’s still a couple months away. The first snow happened early this year, it’s only October 14 and there are four inches of snow outside! Fortunately, my mom was in town this weekend and there’s not many things better than spending a snowy weekend baking & cooking with mom! I wanted to try something new since I’ve been going heavy on everything pumpkin. I LOVE pumpkin but it’s nice to switch it up every once in a while! Hence, the peanut butter banana walnut bread. This recipe…

    Pumpkin Chocolate Chip Breakfast Bread

The leaves are changing, the weather is starting to cool off, and Trader Joes has all their pumpkin items in stock. It’s officially fall. Now, I don’t know about you but I LOVE everything pumpkin. Always have. There’s something about the smell, the feeling I get when I get a big wiff of cinnamon, pumpkin spice, or toasted pecan, that makes me all warm inside. Out of all the fall-inspired eats, pumpkin chocolate chip bread has always been my favorite. I’ve tried a few recipes out and this one is a winner! I hope you enjoy it 🙂 Print Pumpkin Chocolate Chip Breakfast Bread Prep Time 10 mins Cook Time…

    Grain-Free Date & Nut Bites

How often do you crave a cookie? I bet you’re craving one right now. I love cookies as much as anyone, but I don’t always have time (or patience!) to make a batch from scratch and wait while they bake. They also have a lot of added sugar and never taste quite as good with sugar & flour substitutes. So, I’ve come up with a super quick, healthy solution. No-bake, grain-free, guilt-free bites! That’s a mouthful. Literally. As always, feel free to adapt the recipe according to what you have on hand, the only staple in this one is the dates.
