My favorite thing to do on snowy days is bake. After sleeping in, jumping into some cozy clothes, and drinking a hot cup of coffee the first thing I do is find a recipe that sounds warm and comforting. This time, I was browsing through my Instagram feed, waiting for something to call out, “pick me!”
The Coconut Oil Granola recipe from Pinch of Yum stopped me in my tracks. To be honest, I have never made homemade granola. I know, right?! Crazy. Now, I have no idea why I never made it before! I already had all of the necessary ingredients in my pantry so with a few substitutions this recipe was born.
If you want your kitchen (or your entire house) to smell like cinnamon roasted nuts you should make this. It made my home smell delicious and I will be making this homemade granola much more frequently now that I know how easy it is!
Delicious homemade granola recipe for breakfast, a snack, or even dessert!
- 3 cups rolled oats
- 1 cup chopped cashews
- 1/4 cup chia seeds
- 1 cup slivered almonds
- 1 cup shredded coconut (coconut chips work well too)
- 1/2 cup coconut oil melted
- 2 tbsp maple syrup
- 2 tbsp honey
- 1 tsp cinnamon
- 1 tsp salt
- 1 cup dried cranberries
Preheat oven to 300 degrees.
In a mixing bowl, mix together everything except the dried cranberries.
Spread evenly on a greased baking sheet and bake for 30 minutes.
Remove from the oven and stir in the dried cranberries. Bake for another 10 minutes.
Let cool for about 20 minutes then transfer into an air tight container. Store at room temperature for up to a week.
