How often do you crave a cookie? I bet you’re craving one right now.
I love cookies as much as anyone, but I don’t always have time (or patience!) to make a batch from scratch and wait while they bake. They also have a lot of added sugar and never taste quite as good with sugar & flour substitutes. So, I’ve come up with a super quick, healthy solution. No-bake, grain-free, guilt-free bites! That’s a mouthful. Literally.
As always, feel free to adapt the recipe according to what you have on hand, the only staple in this one is the dates.
Grain-Free Date & Nut Bites
Makes approx. 15 small bites
-6 dates, pitted and soaked in hot water for approx. 5 minutes
-1/2 cup walnuts, soaked in hot water for approx. 5 minutes (can also use pecans, cashews, peanuts, or almonds)
-1 tsp cinnamon
-1 tsp ginger
-1/4 tsp nutmeg
-1/2 tsp salt
-2 tbsp ground flax seeds (can also used oat flour, almond flour, or coconut flour)
-2 tbsp hemp seeds (can also use chia seeds)
-2 tbsp pumpkin seeds
-approx. 2 tbsp shredded coconut for rolling (can also use a cinnamon sugar mixture, cacao nibs, or melted chocolate)
In a blender or food processor, blend the dates and walnuts until smooth (there will probably be chunks but that’s okay).
Scrape into a mixing bowl and stir in the remaining ingredients.
Use a spoon to form into small, bite-sized balls and roll in shredded coconut or other coating.
Store in the freezer or refrigerator and eat as a snack or dessert!
