Coconut Cranberry Granola

Delicious homemade granola recipe for breakfast, a snack, or even dessert!

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped cashews
  • 1/4 cup chia seeds
  • 1 cup slivered almonds
  • 1 cup shredded coconut (coconut chips work well too)
  • 1/2 cup coconut oil melted
  • 2 tbsp maple syrup
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 300 degrees.

  2. In a mixing bowl, mix together everything except the dried cranberries.

  3. Spread evenly on a greased baking sheet and bake for 30 minutes.

  4. Remove from the oven and stir in the dried cranberries. Bake for another 10 minutes.

  5. Let cool for about 20 minutes then transfer into an air tight container. Store at room temperature for up to a week.
